I would call it thoroughly peeling a coconut. First time I ever see someone go through the trouble.
Where I'm from, people would just cut some of the top, make a hole and pour the water or hand you a straw to drink it directly.Then, when it's empty, they'd cut it in half and give you a piece of the top as a spoon.
That peeled thing looks neat, though.
